The garden kitchen
What the district grows,
cooked the way it always was.
Lake fish, Binthanna rice, wild honey from the forest people, buffalo curd, kithul treacle. Butter and chutneys made here. The pavilion is open to the garden, candles come out at seven, and the brownie is as big as the reviews say.
Village breakfast
Kiribath, pol roti, lunu miris, hoppers off the pan, kithul treacle, and fruit cut that morning. Served by the pool or on your balcony.
Rice and curry at noon
A dozen small clay bowls: dhal, jackfruit, gotukola, lake fish, beetroot, ash plantain. The way it is eaten in the villages around Binthanna.
Candlelit dinner
The garden lights come on, the pool goes still, and the chef sends out the day's catch wrapped in banana leaf.
Live village cooking
Clay pots on a wood fire at the lake rock. You grate the coconut. We handle the rest.
